Moist Carrot Cake Muffins

Gross. Just the thought of eating a muffin that someone else had taken a bite of and then put back together and then I took a bite of it and didn’t realize…oh, dear god, no! And, if you weren’t already grossed out enough, I also want to talk about the word moist – which a lot of people seem to have a problem with. As in describing these Moist Carrot Cake Muffins, ahhh!

Personally, I have more of an issue with partially regurgitated food then I do with a word like moist. Wait, actually, I don’t have any issue with the word moist and I don’t understand why it bothers people. Here’s hoping my muffins turn out delicious and moist! See, it’s ok because it doesn’t bother me.



  • 1 cup flour
  • 3/4 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups carrots
  • 2/3 cup oil
  • 2 eggs


  • 1/2 cup cream cheese
  • 1/4 cup butter
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract



Preheat oven to 350 F and line your muffin tray with paper liners. Combine dry ingredients (flour, sugar, cinnamon, baking soda and baking powder). Grate carrots and combine with oil and eggs. Slowly add the dry ingredients to the wet ingredients until just mixed. Pour into muffin tin no more than 2/3 full. Bake for 13-15 minutes.


Remove cream cheese from the fridge and allow it to warm up, about half an hour. Blend the cream cheese and butter together and add vanilla extract. Add powdered sugar slowly until you reach a good consistency for frosting. Frost the carrot muffins after they have fully cooled.


Do kids actually hate carrot cake? Since I have no kids and three money, you can see why I would be confused. I think these muffins tasted really good (and moist!) and also quite sweet, which is something kids usually like. Maybe kids dislike carrot cake because they contain a carrots (the cake, not the kids) and carrots are a vegetable? Once again, I’m confused and would appreciate reader input.

So, your homework is as follows:

  • Explain why the word moist is gross
  • Explain why (if?) children dislike carrot cake
  • Eat a stick of butter

Honestly as a kid I was against eating carrot cake due to the fact that it had carrots in it. But then happenstance allowed me to try some later on in life and it turned out I like it. Also as far the carrots go I’ve seen recipes for carrot cake that involve adding orange juice (which I see your recipe does not). Helps cover the carrot taste so they say thus making it more palateable to the kids. First of all, I’m pretty sure doctors have been telling us to eat a stick a butter a day for years, I’m just looking out for your health!
As far as the orange juice, I did see some recipes that included that – but (don’t tell anyone) I actually like carrots so I like having the taste of carrots in my moist *gasp moist* cake. Which, you are right, moist is a great word for discussing cake and a terrible word for discussing just about anything else. Example: wow this movie theater chair sure is moist!


The word moist reminds me of a damp towel in the corner getting mouldy. Or a hairy man with a 70s porno stache looking directly into my eyes and whispering “…. MOIST.”
I still don’t mind the word though, especially when it’s used to describe food.

I loved carrot cake as a kid and still love it as an adult, Bart is seriously missing out.


I agree. I think Bart dislikes carrot cake based more on principle (it being a vegetable) then taste. Also, thanks for the visual of the 70’s porno stache.

I really like carrot cake (pro tip: add pineapple and/or chopped walnuts for increased goodness) but every time I try to eat it now I think of this scene. Thanks, crummy late-period Simpsons episode!

I’m not sure about the pineapple, but the walnuts are an excellent suggestion! I’ll be sure to try that…without the spitting the food back out part of course.
