I’m going to have to disagree with Moe and say that the neck is not the best part of the chicken. In fact, I would rank it quite low on my list of chicken parts I want to eat. However, the neck is an excellent addition to add into homemade chicken stock. I had previously made some homemade stock which included the “best part” of the chicken, which is what I used to make Moe’s Hobo Chicken Chili.
Let’s take a moment to talk about secret hobo spices. First, apparently, this is actually a thing so there’s something new that I (and presumably many of you) just learned. I based my hobo spice mix on several examples I found online and made sure to include classics like chili powder since this is, of course, still a chili recipe.
Ingredients
- 1 Jalapeno
- 1/2 Onion
- 6 Garlic Cloves
- 1 Can Black Beans
- 1 Can Red Beans
- 2 cups Chicken Stock (contains chicken neck)
- 1 Can Crushed Tomatoes
- 2 Chicken Breasts
Secret Hobo Spices
- 1 tablespoon paprika
- 1/2 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoons cayenne pepper
- 1/2 teaspoon oregano
- 1/4 teaspoon thyme
- 1/4 teaspoon cumin
- 1 tablespoon chili powder
- 1 teaspoon black pepper
Directions
Finely mince onion, garlic, and jalapeno; coarsely chop chicken and set aside. In a large pot heat oil of your choice add onions and cook until translucent; next add garlic. Cook for a few minutes and add chicken until brown. Add chicken stock, beans, and tomatoes and stir to combine.
Next add secret hobo spices and simmer for however long it takes for the flavors and texture to come together (1-2 hours should do it).
I didn’t really think I was going to like this. In my mind chili equals beef, so using chicken seemed weird and strange. However, this turned out amazing and was by far one of the best chilies I’ve ever made. Was it the secret hobo spices? Was it the chicken neck? I think it was that plus the secrete ingredient…love?!? Wait, that can’t be right.
