Huevos buffaleros appears to be a play on huevos rancheros which (depending on where you live) is probably either easy or difficult to find. For me, it’s difficult to find so I was excited to try and make this. My goal for this breakfast was to make the rancheros version of the eggs and then just throw a lot of buffalo meat at everything (including the orange juice).
Disclaimer: no buffalo were shot in the making of this recipe!
Ingredients
- Buffalo Sausage
- Eggs
- Corn Tortillas
- Salsa
- Orange Juice
Directions
Fry the buffalo sausage over low heat for approximately 15 minutes to ensure it is cooked all the way through. Chop the cooked sausage up and add to salsa of your choice, then gently heat while cooking the eggs. Fry the eggs to your preference (mine were over easy) and place on top of a preheated corn tortilla. Add buffalo salsa and serve with some fresh squeezed buffal-OJ …aka adding one of the buffalo sausages to the orange juice.
Honestly, the orange juice wasn’t that bad! The buffalo sausage kind of warmed up the juice but it also added a nice greasy meat flavor which I was ok with. Actually, it really didn’t alter the taste much at all, but that’s mostly because I left the sausage in there just long enough to take the picture and then removed it. The sausage didn’t suffer any ill effects from being placed in juice either.
This was a tasty breakfast and something I would recommend to any frontier people looking to cross America. Take THAT Connie Appleseed!
